Osso Buco Veal Stew

Osso Buco Veal Stew
Το Osso Buco is the ideal piece of Veal Shank for a well-cooked Stew but also for the perfect Beef Soup. In fact, I recommend sautéing the Osso Buco in olive oil, so that it takes on color and flavor from each side, before it is cooked and accompanied along the way by selected vegetables and aromatic spices. Thus, an innocent Greek Stew can be deliciously hellish with its multi-layered, hidden deliciousness!
Some prefer to accompany this dish with Pappardelle, others with Oven-Fried Potatoes, Barley, Risotto, Polenta. This time we enjoyed it with a super extra Mashed Potatoes!

Peach Compote & Jelly

Peach Compote & Jelly
This year our peach production was small. Some of these we enjoyed fresh and cool and some were made compote to keep them as long as we can and have them for various pastry preparations I had in my mind.
Basically the story behind this compote recipe was to make an ethereal blancmange (from the French blanc-manger). In retrospect, I realized the huge range of sweets, where we can use our hot or cold compotes. From the simplest dessert, such as on a velvety cream or yogurt, to something more complex, such as on or inside a fridge cake.
Today's suggestion is peach compote and jelly. Once the fruits have been prepared and made compote to become jelly it was the simplest dessert we could make and enjoy.

Strawberry Spoon Sweet with Sangria

Strawberry Spoon Sweet with Sangria
Strawberries are a very delicious fruit and, of course, as it has often been said here, it is not needed to cook for a long time, it do not benefit in any way and ends up having a rather useless dish. The long-term preparations make it lose some good nutrition and have a lot of time sprinkled with a lot of sugar, it's dehydrated because sugar acts as a catalyst for its dehydration and ends the strawberry dry without juice and taste.
Today we recommend short procedures with a reduced amount of sugar for a 10-minute Spoon Strawberry Sweet. Limit time for this sweet, which is flavored with cloves, honey and sweet Sangria wine.

Octopus with Balsamic & Raisins

Octopus with Balsamic & Raisins
Octopus with special flavors, with a little surprise on the palate when it encounters the black currants. Adding them together with the balsamic to give rich sweet and sour taste, a unique velvety flavor to octopus and light tones of sweetness, enhancing the texture of caramel aftertaste. Do not miss!
Balsamic Vinegar contains substances with a strong antioxidant effect, and is 4 times more antioxidants from fruits and vegetables! It is a natural product without additional sweeteners, preservatives and colors. It is ideal ingredient in recipes with meat or fish, fruits, cheeses, pasta, ice cream, in marinades and salads with raw or cooked vegetables. We combine it with pure virgin olive oil.

Pork Ragù with Pasta & Bechamel Sauce

Pork Ragù with Pasta & Bechamel Sauce
In Italian cuisine, the ragout (ragù) is a sauce with meat, usually served with pasta and created by Alberto Alvisi in the 18th century.
The common feature of ragù recipes is the presence of minced meat and that together the components become a sauce for pasta. The most famous dish is stew ragù alla bolognese.
Leaving pork slowly cooked in tomato sauce builds a deep and rich flavor. Usually served upon Pappardelle, but with my choice and the tendency to create something new / different always based on the original recipe, pasta incorporated in ragout sauce and then covered with a thick sauce semolina, that went golden brown in the oven and became a new dish, very tasty.
Of course it is needless to emphasize that it is infinitely tastier than the classic pastitsio…

Grape Molasses Pudding with Sweet Red Wine-Moustalevria

Grape Molasses Pudding with Sweet Red Wine-Moustalevria
Molasses is a thick syrup, which is made by boiling the grape must. Kept unchanged for a long time and with this we make various sweet dishes, jelly, must cookies etc. It can also be added as a unique addition to grilled on the oven to salads and other sweets.
The Moustalevria is a simple dessert that comes from our ancient past to sweeten our present. Added Mavrodafne for exhilarating touch and taste intensity.

It's a traditional Greek pastry, whose main ingredient is the grape must. Its roots date back jelly in ancient times where it was known as oinouta a name that survived into the Byzantine period along with other names such as moustopita and pastellos. In Crete, referred to as kefteria, in Samos as Kourkouta or treat the vintage while in Cyprus Palouzes. Ancient sweet, which enjoyed not only by Dionysus, but also by ordinary people. Moreover how could it be otherwise, when around the numerous vineyards cried the voices of the harvesters and presses the grapes become must and mutate into wine and its derivatives.

Vin D'Orange-DIY

Orange Wine-DIY
Vin D'Orange, or Orange Wine is a delicious, very aromatic and perfectly balanced spirit drink. The aromas of spices and the freshness of citrus blend with the vividness of wine, create an excellent drink with delicious tension.
The slightly bitter & hypoxic flavors of some fruits balance with the sweet notes of others, but also with that of sugar and of vermouth. The palate detects, through a total of tastes, one by one the perfume ingredients. The tartness of the bitter orange, the flavor of vanilla and cinnamon, the intensity of alcohol and the light tones of sweetness…

Chilli con Carne

Chilli con Carne

Chili con Carne (Hot Peppers with meat) are among the most famous, typical dishes of Tex-Mex (Texan and Mexican) cuisine. There are infinite variations on the basic recipe of this dish, which has its roots in Mexican cuisine and was the dish of the poor Mexican population. For sure it contains meat, hot peppers and spices. The rest -red beans, tomatoes etc.-, probably added in the course of transition in every continent.
It is intensely spicy to very spicy and what you need for this season of the year and for lovers of very spicy flavors. In our house we have one of those lovers and this dish is his favorite. So the more spicy the better. You moderate a little bit the hot doses of ingredients and enjoy it completely plain or on boiled rice, yogurt, mashed or baked potatoes, sprinkled with grated cheddar cheese and tortilla chips or wrapped in tortillas with a little corn and lettuce leaves. Consumed with zest as it is!
