Eggplant is a tender perennial plant of the family Strychnoid (Solanaceae) and is cultivated for its homonymous fruit. Eggplant dominates in Mediterranean dishes. For us the moussaka and the shoes, the Italian parmesan aubergine and the Turkish imam baildi are among the best known. It is also roasted, fried, stuffed, salad and in vinegar (pickled).
Eggplant has low nutritional value and characteristic taste. It contains a greenish substance, strychnine, which can cause stomach upset when fruits are eaten unripe or very ripe. That's why attention is needed.

I do not de-bitter Aubergines for many years. I think this process is not necessary and taste is not improving. The truth is that over time the varieties have changed, de-bitter would be much more important than it is now. Salt helps aubergines to eliminate their metallic taste, as well as part of their juices and nothing beyond that. It is more important to choose from the market aubergines without many spores, which are tasteless and hard and change their taste.

A delicious Stuffed Recipe over the established traditional, classic recipe made by our mothers and grandmothers, with whatever vegetables they had available or their bowl and including all the big vegetables that could empty their crumbs and filled with rice only, without minced meat, but always delicious and aromatic. From eggplants, potatoes, pumpkins and naturally mature, reddish, vigorous tomatoes. Everything was used perfectly according to the wishes of everyone in the family.
The current proposal is with peppers only without excluding the remaining vegetables, if you like. The filling with minced meat and aromatic herbs also give a very tasty dish. They are made easy and fast since preparing to fill the peppers is not difficult or time-consuming.

One tip only: Fry the eggplants in too little oil and for very little. We do not want to absorb oil to spoil the freshness of this dish and to taste it.

The season of fresh leaves is in May and June, depending on which area we are talking about. Find and cut your own fresh spring vine leaves, the first ones that Greek vineyards make or buy ready-made cuts from your neighborhood and prepare them to get into your cupboards so you can use them at any time. And do not forget the best leaves are gathered when they are still tender only by the climates of the Sultanina variety or Debina variety.
The suggested method is simple and very easy. Packaged this way, they will keep perfectly in your freezer. Yours!

To have a tasty soup what you need is nothing more than the good fresh fish. Not that it can not be done from frozen fish but definitely fresh is preferred. The dusky grouper, the white grouper, the scorpaena, the European hake, etc. are ideal. Also the smaller fish, those that live near rocks make the best fish soup. You choose any fish or fish combination you like and enjoy it.
It is one of the most delicious and healthy dishes in Greek Cuisine. The shrimp in the current proposal playing the guest star role is not a sine qua non. Fish soup can be made without them… The vegetables are for accompanying this dish. A light dish and if you choose the winter version is a dish of warmth and coziness.

In the logic of the One Pot, all in one, prepare this special dish with chicken drumsticks onto Gratin Potatoes and all together in the oven to bake.
The chicken goes over the chopped potatoes and during baking all juices and tasty ingredients flowing onto gratinated potatoes, create incredible flavor. So we have a double and triple tastier dish. A delicious fried chicken and beautiful honeyed, juicy and creamy Gratin potatoes.
Most of the chicken fat has been removed during frying and looks like a rotisserie chicken, seasoned with aromatic spices.
This way of cooking chicken and potato yields maximum flavor we could demand from a combination like this.

Stuffed Vines Leaves with Pine Nuts & Currants
Today's stuffed vine leaves -dolmades gialantzi- (only rice without meat) have different ingredients than others, we have proposed here occasionally. They form different wrapping, they are like little ladies fingers, thin, oblong, delicate, with long grain rice. Pine nuts, raisins and cinnamon gives its Constantinople origins and give them tons of sweet aftertaste.
