Ingredients (8 servings)

  • 700g (1.5 lbs) mixed mince pork & beef
  • 3 colored peppers
  • 1 onion
  • ½ bunch fresh coriander or parsley
  • 1-2 twigs of mint
  • 2-3 tbsp mixture of oregano, hot pepper, red pepper, ginger
  • salt & pepper
  • 2 eggs
  • 50g (1.8oz) grated parmesan
  • 2 slices toasted bread or ground toasted bread
  • 2 tomatoes
  • 4 potatoes
  • 100g (3.5oz) peas
  • 100g (3.5oz) gouda cheese
  • 100g (3.5oz) gruyere cheese
  • 100g (3.5oz) olive oil+some white wine
Wash, clean and cut vegetables and herbs. In the blender, put the coriander, the pepper, the 1 pepper and the onion and chop them without making ointment. The rest of the vegetables are left aside, we will use them for garnish in the pan.
At the same time, soak the slices of bread and drain well. Prepare the mixture of spices we will use.
In a large mixing bowl, put minced meat, dried bread, eggs, finely chopped herbs from the blender, grated parmesan, salt pepper and the spice mixture. Knead the contents of the bowl to mix the ingredients well.
Spread with your palms the mixture of minced meat on the base of the pan that you will use or on a paper roll for greater ease of wrapping and transferring it to the pan. Above the spread of minced meat, put in a row and alternately a few pepper sticks, a little bit of peas…
… and continue with cheeses, cut into thin slices to cover the lower layer. Place a few slices of tomato over the cheeses. Turn the mince to cover the entire filling inside, giving it at the same time the shape of the roll.
Around it add the remaining vegetables. Potatoes, the remaining peppers, the rest of the peas, and tomatoes in slices. Rub with olive oil and with wine and salty pepper.
Bake with the pan covered, up and down resistance, at 200℃ (392℉, Gas Mark:5.7) for 1 hour. Finally, check and unravel to brown the food.
