So cute, both practically & as welcome gifts for friends and relatives for Cooking, Pastry & Cocktails. We can we make them from time to time, they are so easy and we use them so often in our Kitchen!
Make a series of transparent bottles or jars of various shapes and decorate your kitchen shelves. I find it beautiful and create pleasant mood.
Extraction is a natural process by which a substance is transferred from a first ingredient in a liquid solvent. Extracts are made the same way from many other ingredients such as: Coffee, Chocolate, Mint, Lime, Rosemary, coconut, almond, bitter almond, various Berries etc. Choose whatever you like.

Ingredients (6 small bottles of 100ml -3.4 floz)

  • 6-7 vanilla pods
  • 1 orange organic
  • 1 lemon organic
  • 1 clementine organic
  • 1-2 tips fresh peppermint
  • Votka or Bourbon or Dark Rum
In large saucepan put the bottles and their caps to boil for 10 minutes. Remove them with tweezers and let them cool on kitchen towel.

Homemade Orange Extract (1 bottle 100ml -3.4 floz)

  • 1 large orange, thick peel
  • 100ml-3.4 floz Vodka
Wash very well the orange and pat dry with paper towels. With a special accessory get thin strips of the peel of an orange. Pour them in a bottle. Leave aside until you gather all the ingredients together.

Homemade Vanilla Extract (2 bottles of 100ml-3.4 floz)

  • 6-7 Vanilla pods
  • 100ml-3.4 floz Vodka
  • 100ml-3.4 floz Bourbon
Pass pressing vertically, the back of the knife over each vanilla pod to widen.
With the knife nose torn pods lengthwise and put in each bottle 2-3 lobes. If the lobe is long then cut it in two vertically.

Homemade Lemon Extract (1 bottle 100ml-3.4floz)

  • 1 large lemon, thick peel
  • 100ml-3.4 floz Vodka
Wash the lemon and wipe with paper towels. With the special accessory get thin strips of peel of lemon. Pour it in a bottle. Leave aside for a while.

Homemade Mandarin Extract (1 bottle 100ml-3.4floz)

  • 1 large clementine, organic
  • 100ml-3.4floz Vodka
Wash the mandarin and pat dry with paper towels. With the special accessory get thin strips of peeled mandarin. Pour it in a bottle. Leave aside for a while.

Homemade Mint Extract (1 bottle 100ml-3.4 floz)

  • 1-2 tips fresh mint from our garden pot
  • 100ml-3.4floz Vodka
Wash the mint and dry it in the same way, on kitchen paper. Put it in the bottle pushing it with chopsticks. Push to smash the leaves in the bottle. The mint leaves after a few days become brown. When the essential oils flavor the alcohol, simply remove.
You collect the bottles that you filled with vanilla and other ingredients. You fill them with vodka (we filled a bottle of vanilla with whiskey) up onto the neck of the bottles, without resting on the lid. Seal well and store in a cool, dry place. Periodically shake to mix the liquid inside them.
After 6-8 weeks or longer you have ready the extract. Patience.

  • If the alcohol level is lowered just add some vodka. Even when we use it, and slowly empties, we can complement alcohol.
  • As the days go by the alcohol in the bottles will be stained by the essential oils of the ingredients and especially the vanilla extract will darken and the aroma will be richer.
  • After 3-4 months remove the peels of citrus. If they stay too long, the extract can turn bitter.
  • If we want to make a larger quantity to a bottle or jar, add more citrus peels.
