Pies with Ricotta, Mozzarella & Gruyere Cheese
As has been repeatedly written here, in several recipes, savory and sweet, Kourou Dough -yogurt dough- is so pliable, soft & velvety, and which we love to make for its ease of handling.
The pies are filled with any filling we like. Here their cheese filling was, in addition to fresh Anthotyros (like Ricotta), straight from its source of production and from the first to start using fresh milk, Tyromalama (like Mozzarella) and Gruyere Cheese. The 3 most beloved cheeses of Crete were combined and made into pies.

Lemony Cream Cake!

Lemony Cream Cake!
This creamy Cake/Layered Cake, which is wonderfully fluffy and musky scented lemon, filled with traditional goat yogurt combined with Katiki Domokou (ricotta), gave us pleasant tasting -but also festive- moments.
The lemony cream inside, with intense acidic tones, is sandwiched between 2 layers of crumbly dough mixture, which makes it very special and wonderfully delicious. The almond fillet enhances its taste and appearance. It is barely sweet because this is our choice, so we accompany it with a sweet red wine.
We liked it doubly because we had in mind to enjoy it during the holidays and so we named it "Birthday Cake" in honor of the birthday person...

Fried Cheese Pies
Fried Cheese Pies, with excellent cheeses, are super tasty and easy to make. Like saying 3 in one!
I choose a lovely fresh country market sheet to wrap these triangular cheesecakes and enhance the flavor & their convenience for when I want a quick and easy snack for all hours of the day or for a larger production for several people…
Ideally and very often they become our favorites at a Sunday brunch, along with other delicacies Savory and Sweets.
Of course, they are loved by our family, they all love them bathed in Greek thyme honey.

Crostata without Butter with Ricotta & Peach Jam

Crostata without Butter with Ricotta & Peach Jam
I wanted to try this type of dough, which contains light oil instead of butter. Although not really an Orthodox preparation compared to the rules of pastry, it is a great and easy way to make a dough very quickly. Mix everything in a bowl, work with the wire or spoon and then finish the process with a quick kneading on the kitchen work surface.
This shortens the time needed to make a sweet tart dough, as it does not need to rest in the fridge and can be used immediately even when there are a hundred degrees in the house due to the summer heat.
We open a sheet of handmade dough that is easily inserted into the tart dish, fills up and at one point we have our tart ready to get into the oven.
Sweet Tart without butter, filled with anthotyro -ricotta cheese- & Peach Jam, made by us in a very short time and with less sugar. Light Peach Jam recipe at the end of the article. The dough sheet is so wonderful, with biscuit texture, crumbly, that it will surprise you with its taste and texture. It can also be used in savory tarts by removing sugar.
Hmmm, remember to make some cookies with this dough…

Baked Tortilla Roll-Ups
The tortilla (small torta) is a type of unleavened, thin, soft, flat cake of corn flour or fine milling wheat. Initially, corn tortilla was born in Mexico and preceded the arrival of Europeans in America. Wheat flour tortilla was a novelty from the Sephardi Jews who considered corn flour as non-kosher and used wheat coming from Europe. In China, there is the folksy (烙餅), a viscous "pancake" that is similar to the tortilla.
Tortillas are usually filled with various ingredients and accordingly they get different names like: tacos, quesadillas and burritos.
What Kitchen Stories today suggests is Tortillas stuffed with cheeses, mushrooms and sausage. Chopped with a delicious spicy tomato sauce and baked in the oven.

Spiral-Shaped Greek Cheese Pie
Special cheese pie in a spiral shape (twisted or snail) with a thin crust sheet, feta cheese, cheddar, soft strained ricotta, dill and mint. I called it spring because of the herbs that give it flavor and great taste. Enjoy the as main dish combined with a light green salad, to alleviate the high fat taste of mizithra (or ricotta) cheese pie. Also, I suggest you enjoy it with a sturdy spoon of honey onto the hot pie.

Orange Ricotta Pancakes
Pancakes, known to us all are delicious, easy to make and can be combined equally well with savory or sweet flavors. This American dish that has spread and loved in many countries, not only in our homes but also in hotels, where they welcome populous and diverse population. There is no hotel that respects himself on one side of the world to the other, which does not include in the breakfast of Pancakes!
Today we enjoy them fluffy and warm, with strong orange flavors, with Greek ricotta and bathed with beautiful sweet kumquat.
