Slow cooking is an ideal method of cooking and this is possible by a Slow Cooking machine. Beyond any positive elements, such as energy savings, convenience for a delicious meal, etc., we have more personal time free to utilize in wherever else we want.
Put all the ingredients of the food in the pot and forget it for 6-8 hours depending on the temperature you choose. It is a convenient solution to put the food to be cooked all night (or all morning) and the next day we ready for serving hot food.

Slow Cooking

A method for cooking using low temperatures (below the temperature of the boiling water 100℃ - 212℉) and accordingly many hours of cooking.
Cooking temperatures depend on the machine that you choose but is usually something like:
low:90°C, high:100°C, warm:75°C
For cooking you should buy a special pot (electric) which is called "Slow Cooker" or "Crock Pot". You can find it at the amazon by searching for "Slow Cooker".
See your convenience
Adjust the Slow Cooker on your program. Prepare the recipe in the morning and let the Slow Cooker work alone all day. You can prepare everything the night before, put them in the fridge and start it in the morning. In this case watch the time it will take to heat up the food from the refrigerator.
Fresh ingredients
Avoid frozen ingredients, particularly meat and poultry, which take longer to cook and can make a mess of your cooking times.
Fill it right
The Slow Cooker should be ½ to ⅔ full. When you boil soups or other foods that need simmering, leave 5 points to the brim. Put the ingredients which need a lot of time to cook - vegetable roots and large pieces of meat - at the bottom of Slow Cooker. More sensitive ingredients such as rice, pasta, milk and some vegetables are added in the last hour of cooking.
Keep it covered, stir rarely
Keep the lid on in order to avoid heat losses, which delay cooking.   You can pick it up to stir. If your Slow Cooker has hot spots it may require shuffling.
Season later, not earlier
Slow cooking results in the deactivation of condiments so try the food at the end to see if you need additional salt or pepper. Better yet, wait in the end almost to seasoning food. Some herbs tend to darken with the slow cooking so it is better to be added near the end.
Attention to cooking
Grease the Slow Cooker before adding ingredients, and in the middle of cooking stir for uniform cooking.

  • 250g (8.8oz) giant beans, without soaking
  • 2 bay leaves
  • 5-6 sprigs fresh thyme
  • 4 medium fresh or canned tomatoes
  • 1 red pepper
  • 2 onions finely chopped
  • 2 cloves garlic
  • 60g (2.1oz) bacon
  • some parmesan
  • 1 liter water
  • 50g (1.8oz) olive oil
  • salt & freshly ground pepper
  • toasted bread for serving
In the Slow Cooking machine put the beans washed and on top add the onion, garlic pepper tomatoes cut in four, bacon cut into large diced and 2-3 pieces of parmesan crust.
Pour water and oil and from above add the herbs, fresh thyme and bay leaves. You'l put salt & pepper at the end of cooking.
Adjust the machine at the higher temperature, cover and leave it to cook for seven hours. At the end check if cooked and soften the beans and add salt and pepper.
Serve with Parmesan peels of old maturation.

Serving suggestion

When it is to serve the food, toast thick slices of bread and put it in the depth of the bowl and add the giant beans. It is incredibly delicious. Together with a spoon of food take a piece of bread soaked in delicious sauce!
If you do not have Slow Cooker do not get disappointed, try this recipe by soaking the giants from the previous night and the next day cook them normally.
