Sour tender chops in the oven, crisp and delicious, with mixtures of aromatic spices. Marinated in a mustard molasses glaze, which gives them great color, color almost caramel and naturally flavor.
Accompanied by sesame baked potatoes in the oven a version where we can enjoy immersing in molasses sauce / mustard.
This is consumed strictly with hands and straight from the oven. Not forgetting their companion, a strong wine red.

Ingredients (4 servings)

  • 2kg (4.4 lbs) lamb or goat chops
  • 70g (2.5 oz)grape molasses
  • 50g (1.8 oz) olive oil
  • 50g (1.8 oz) balsamic vinegar
  • 3 tbsp spicy mustard
  • 1 tbsp dried thyme
  • 2 tbsp dried oregano
  • freshly ground pepper
  • coarse salt
  • 1½kg (3.3 lbs) potatoes
  • sesame
For mustard-molasses glaze: In a bowl mix together until combined molasses, oil, balsamic vinegar and mustard. We keep about half the sauce aside and the rest…
… you pour onto lamb chops.
Mix well to go everywhere and sprinkle with herbs, the freshly ground pepper and coarse salt.
In large shallow oven dish spread a foil and place on it the chops in a single layer.
Bake in preheated oven with potatoes at 200°C (392°F, Gas:5.7) for ~ 30'-35 'until browned. Do not turn them.

Potatoes

Peel, wash and cut into chunks the potatoes. Boil them in salted water for 5'-6' just to pierce with a fork.
Drain them fro the water and return them in the pot in which they boiled. You cover them and holding it by the handles, shake them for 2-3 times to pluck their tips.
In a pan pour 3 tablespoons olive oil and leave in the oven as long as it is warmed up. Spread the potatoes, stir to oil them, and sprinkle with oregano, salt and coarse pepper. 15 minutes before end of cooking turn them once and sprinkle with plenty of sesame.
