Roast Chicken and Oven Fried Potatoes

Grilled chicken with the most favorite accompaniment of the Oven French Fries in another version, interesting and very tasty.
To have a well cooked, juicy chicken and simultaneously with a crisp, delicious crust, is a matter of good grilling technique, so the result is near perfection.

Ingredients (6 servings)

  • 1 chicken ∼1.6 kg- 3.5 lbs
  • 2 tbsp olive oil
  • 1 tsp mustard powder
  • 1 tsp paprika
  • 1 tsp ginger powder
  • 1 tsp spice mix for chicken
  • salt & pepper
Clean and wash the chicken. Allow to drain and pat dry with paper towels.
Brush it through out all sides with the lemon juice and a little olive oil. Sprinkle with seasoning inside and out. Add salt and pepper.
Place the juiced lemons inside the chicken belly and tie the legs with kitchen string.
Place in hull that covers, onto the grill, with the breast facing up.

Put in the oven at 200°C (392°F, Gas 5.7) for 1:15'- 1:30'.

Oven Frech Fries

  • 1½ kg (3.3 lbs) potatoes
  • 4 tbsp olive oil
  • 1 tsp mustard powder
  • 1 tsp sweet paprika
  • 1 tsp ginger powder
  • 2 tbsp breadcrumbs
  • salt & pepper
At the same time prepare the potatoes that accompany.
Initial concern is to put olive oil all over the bottom of the pan, that will roast and put it in the oven to burn.
Peel, wash and cut into chunks potatoes. Sprinkle with spices, salt, pepper and toast.
Add them to the hot pan.
Bake for 45 minutes until browned.
If necessary, turn with a spoon on the other side. Test with a fork if they have softened.
Do not turn the chicken during baking.
At the end remove the lid of the pot, so to brown the chicken.
Remove the chicken from the oven and leave it to stand for 10 mins.
