Grape Must Pudding-Moustalevria

Grape syrup, a little corn flour, roasted sesame seeds, walnuts, and fragrant unique fennel seeds!

Grape Must Pudding-Moustalevria

Ingredients (3 servings)

  • 350 gr/ 12.5 oz grape syrup (petimezi)
  • 350 ml/ 12 fl oz water
  • 5 tbsp niseste or corn flour
  • 3 tbsp sesame seeds
  • 1 tbsp fennel seeds
  • 100 gr/ 3.5 oz walnuts, coarsely crushed
  • some cinnamon
  • a little sugar, if necessary
Measure the grape syrup, keep a small amount and the rest put in a saucepan over medium heat.
Measure an equal amount of water and add to saucepan.
We dissolve the corn flour in the grape syrup we kept, pass it through a sieve and add to the pot.
Let it start boiling and stir it often.
In a nonstick skillet roast the sesame seeds for a while, until lightly browned and release their aroma.
Do the same for the fennel seeds.
When the syrup mix starts to thicken, pour into the pan half of the walnut pieces, half the sesame seeds and half the fennel seeds.
Mix well, taste the sweetness and add sugar if needed.
Remove from the heat and serve the moustalevria in a bowl.
Sprinkle with the herbs/ spices/ seeds remaining.
