Anchovy Dip

Canapés for our leisure!
Pine nuts, parsley, capers and a few green olives!
Make a quick spicy anchovy spread, take your favorite drink (a good white wine is perfect for this) and just enjoy!

Anchovy Dip

Ingredients (for a medium size bowl)

  • 4 slices of toast, without the crust
  • 12-15 anchovy fillets, salted
  • ½ bunch of parsley
  • 1 tbsp capers
  • 7-8 green olives
  • 150 gr/ 5.3 oz pine nuts
  • 1 shot olive oil
  • 4-5 grains green pepper
  • 2 tbsp vinegar
  • 2 tbsp lemon juice
Put some water in a bowl. Soak the bread for seconds. Squeeze well and set aside.
Clean, wash and pat dry with absorbent kitchen paper the parsley.
Put all ingredients in the blender and mash. Taste and correct.
Grill the toast slices, spread some anchovy dip and try again. Mmmmmm! better…
