Dried tomatoes in the oven. A very easy and quick recipe, with endless possibilities to liven and spice every meal.
Add them in sandwiches, in sauces for pasta, in salads, savory cakes and of course as a spread for crostini or anything else you can think of.
Since they are often referred for home sufficiency or domestic luxury, lets make homemade dried tomatoes. I guarantee that they have nothing to do with those you tried from the S.M.

Oven-Dried Tomatoes: Homemade

Ingredients (1 glass jar ∼400g -14.1 oz-)

  • 10-12 plum tomatoes
  • 2 garlic cloves
  • 2 tbsp olive oil
  • 1 tbsp fresh cilantro, finely chopped
  • coarse salt
  • pepper
Cut the pomodori in round slices with thickness 3-4mm (0.12in-0.16in).
Cover with grease-proof paper a shallow baking pan. Pour in the chopped tomato slices, sprinkle with olive oil and sprinkle with coarse salt and coriander.
The spread them over the entire surface of the pan, in a single layer, and on top ​​finely chop the garlic and sprinkle with freshly ground pepper.
Bake in the oven at 100°C (212°F, Gas 0.17) for ~1-1½ hours until dewatered but not to completely dry.
Remove from the oven and leave to cool thoroughly.

  • 70g (2.5 oz) olive oil
  • 70g (2.5 oz) vegetable oil
  • 4 garlic cloves
  • 2 bay leaves, fresh
  • 3-4 cardamom seeds, whole
  • 1 glass jar
At the bottom of the jar lay cloven halves plum tomatoes and pour over 1 bay leaf, 2 cloves garlic and 2 whole cardamom seeds.
Repeat the same for the second layer.
Finally pour over the oils until they cover the entire contents of the jar.
Store in refrigerator.
