Juicy Pudding bathed with delicious buttery and caramel sauce -Butterscotch Sauce- with very strong flavor and unique aroma of Caramel & butter.
Butterscotch is the flavor that gives us caramel when combined with butter. In Butterscotch Sauce, sour cream is added to maintain fluidity, so that it can be used as a cover in puddings, ice creams etc.
The modern use of the word indicates -Pudding- desserts and evolved over time, from the almost exclusive use of the term, which mainly described savory dishes.

Butterscotch Pudding Butterscotch Pudding

Ingredients (6 servings)

  • 125g (4.4oz) butter, in room temperature
  • 60g (2.1oz) brown sugar
  • 2 large eggs, in room temperature
  • 150g (5.3oz) self raising flour
  • 1 tsp baking powder
  • ½ tsp soda
  • 2 tbsp yogurt
  • 120g (4.2oz) buttermilk
  • 1 tsp vanilla extract
In a bowl of a fixed mixer put the butter cut into pieces. Add the brown sugar and whisk vigorously until it becomes a thick and whitened mixture.
Add one by one the eggs and beat to incorporate in the mixture.
Dissolve the yogurt into the milk and add to the bowl of the mixer alternately with the flour in 3 installments. Finally add the vanilla.
Pour the beaten mixture into a well greased ovenproof dish…
…and lay the surface with a spatula.
Bake in preheated oven at 180°C (356°F, Gas:4.2) for 35′-40′.

Butterscotch Sauce

  • 100g (3.5oz) brown sugar
  • 100g (3.5oz) white sugar
  • 120g (4.2oz) water
  • 50g (1.8oz) butter
  • 100g (3.5oz) sour cream
  • a pinch of salt
In a small saucepan pour the water and add the sugar and salt. Boil without stirring. Just shake the saucepan from the its handles.
When sugars are dissolved, and the mixture has taken a deep golden-red color before it starts to thicken, add the butter and cream, very carefully to avoid spattering. Bring to a boil and withdraw the sauce from the heat.
When you pull the ovenproof dish from the oven flood the pudding with the butterscotch sauce.
Do not think that the amount of caramel sauce is large, it is going to be absorbed throughout the Pudding/ Cake…
… and serve with a scoop, super generous portions. It is eaten with a spoon and beautifully combined with ice cream.
