Oven Baked Quinces

Quinces baked in the oven, with sweet wine, aromatic spices like cinnamon and star anise.
Very tasty, very fragrant! What is fascinating about this delicacy, apart from the smell, is its color. Grilled quinces have a bright red-orange shade like purple sunrise. You have to make them just for the color. The trouble is zero and the time just 15'. Just to cut them in 4, sprinkle with red sweet wine and put them in the oven.

QUINCES

Quinces can have shiny or napped skin, with bright yellow, sometimes orange, thin streaks. The quince flower is very beautiful, with pink-white petals. The leaves are silver-green with a fluffy "frost" on them.
The fruits ripen in autumn. When cut, may be maintained for several months if protected from light. Usually within fabric bags and hung up, or under the bed…, as the previous generations did…, or in the refrigerator.



The longer they mature, the stronger their fragrance is diffused in space. You can keep them all winter if you keep them in the dark. The sour and bitter taste disappears with cooking and is excellent ingredient for savory food and desserts.

Ingredients (8 servings)

  • 4 large quinces
  • 150g/ 5.3 oz sugar
  • 1 lemon
  • 2 sticks cinnamon
  • 2 star anise
  • 120ml/ 5.1 fl oz, mavrodaphne or porto wine (sweet, red wine)
Wash the quinces, cut in 4, and remove the seeds. Do not peel.
After cleaning each piece, rub with lemon and place it with the skin downwards, in an ovenproof dish with lid.
Add the spices and sprinkle with sugar.
Sprinkle with sweet red wine.
Cover the pan with a lid or a foil.
Put the pan in the oven at 180°C/ 350°F/ Gas 4 for 1 hour or until cooked to soften and condense their juice. Test with a fork.
Do not stir.

The baked quinces may accompany the festive table and be served as a dessert with Greek strained yogurt, bathed in their sweet-smelling syrup.
It is an ideal dessert after a heavy meal.

You can serve it also with a very light whipped cream.
