These dough cheese snails is customary in Greece to call "Cheese Pie from Skopelos Island", certainly not because they make only there, in Skopelos Island but because it is so naturalized and we do not want to spoil their grace and… nationality. In Macedonia, say, a little twisted pie known as "Kichi" is from Kozani and baked in the oven.
Water and flour, and filled with good goat cheese and definitely fun to knead, to fold and open thin sheet very thin.
After that the taste is completed in the pan. Placed in the oven, if we prefer, become tastier in the pan and the process becomes faster.

Ingredients (4 large Cheese Pies)

  • 500 gr (1.1 lbs) flour
  • 1 tsp salt
  • ½ tbsp baking powder
  • 3 tbsp oil
  • 1 tbsp vinegar
  • 1 egg
  • ~200 gr (7.1 oz) warm water

Filling

  • 300 gr (10.6 oz) feta cheese
  • 300 gr (10.6 oz) goat cheese
  • olive oil
In small bowl sift the flour, mixed with salt and baking powder. In the center we open a small puddle and add the oil, vinegar and egg slightly beaten. Pour the water gradually so as necessary to knead well so to have a soft, elastic and slightly wet dough, which will not stick to hands.
Divide the dough into 4 or 6 equal balls, cover them lightly with a towel and set aside for half an hour.
In the meantime, prepare the filling. In a bowl crush with a fork feta and goat cheese to make crumbs. Stir to mix.
You take one by one a little ball and roll with the dipstick onto floured surface. Open it as thin as we can. Even if you make some holes tweak manually to close and continue, flouring every time when needed.
You create a large, circular, sheet. Sprinkle a little olive oil and with a brush spread it across the surface of the sheet.
Sprinkle ¼ of grated cheese to go everywhere around the sheet.
By lifting one edge of the sheet that lies ahead wrap to the opposite side not too tight nor loose, so as to close the cheese in a long roll.
Roll it spirally to make a shape like a snail. Closes and stabilizes the edge under the roll. You place it on a floured surface or a silicone surface and continue with the same process with the next balls of dough.
In nonstick skillet, add olive oil and place the two by two. Brush the surface with oil. Fry over medium heat, to get cooked to inside without fried quickly and burned outside.
Turn and the other side with two forks without getting punctured.
Olive oil for frying as you like. My habit is to put a little.
