Pancakes are not simply with flour and water. It is an enhanced, level dough dessert with requirements on the quality of ingredients and their preparation, without this, meaning that it is difficult to produce them.
The rich and thick porridge with the addition of a quantity of maize flour, gives them, apart the earthy and very special flavor, beautiful color. The addition of yogurt makes them soft and inflatable and certainly the fruit -here you put bananas- enhances the tastiness as caramelized sweets during frying. Abundant honey flows in an amount corresponding to our desire. How sweet you want them to let us "build" our breakfast and our whole week.

Cornmeal Pancakes

Ingredients (14 Pancakes)

  • 160g (5.6 oz) flour
  • 60g (2.1 oz) corn flour
  • 2 tsp baking powder
  • ½ tsp soda
  • 1 tsp salt
  • 1 tbsp sugar
  • 2 large eggs
  • 60g (2.1 oz) butter
  • 200g (7.1 oz) milk
  • 100g (3.5 oz) yoghurt drained
  • 1 tbsp vanila essense
  • 2 bananas
  • butter for frying
  • honey for serving
In a large bowl sift together the two flours, the baking powder, baking soda and salt. Add the sugar.

Break and divide the eggs into yolks and whites and put them in separate bowl. In the bowl with the yolks add milk, yogurt, butter melted but without being hot and vanilla.
Mix with whisk to homogenize the ingredients.
Pour the liquid mixture of the milk in the dry mix of the flours and stir the dry ingredients to mix the two mixtures.
Allow the mixture for 5'-7' until it thickens slightly. The corn flour absorbs more liquid than plain flour.
In the meantime, beat the egg whites in a not too stiff meringue and incorporate it gently into the mixture.
Cut the banana or any other fruit you like (apple, pear, etc.) into thin slices. In nonstick skillet or pan for pancakes put some butter to melt.
With deep soup scoop get from the mixture and pour in the cups.
On top place 5-6 slices of banana…
When the upper surface is dry you turn them from the other side and let them cook and the fruit caramelised. They are eaten hot, with honey, jam, maple syrup, etc.
