Tiramisu

Tiramisu
The Tiramisu is the most widely used, Italian pastry around the world. Made with ladyfingers, strong espresso coffee and mascarpone cheese. It is said that the place of origin is the region of Veneto and particularly the city of Treviso. Although many have objected on it …
But that which we are interested in is to enjoy a delicious dessert, of which there are many variations and anywhere only friends!
A classic recipe is one that I follow for years and really all these that have tried it like it a lot. The current proposal is a small "herecy" since it adds cinnamon biscuits. Was this desire, which, however, gave a touch aromatic sweet cinnamon, going with coffee.
There is a procedure of preparation of different materials, which have to be prepared separately and then joined together.

Tiramisu

Ingredients (~12 servings)

  • 36 ladyfingers
  • 100g (3.5 oz) cinnamon cookies
  • 500g (1.1 lbs) mascarpone cheese
  • 4 tbsp sugar or icing sugar
  • 3 egg yolks
  • 200g (7.1 oz) crème fraiche, thick and cold
  • 2 egg whites, beaten to stiff meringue
  • 3 tbsp amaretto liquer

Coffee

  • 250ml strong espresso coffee
  • 2 tbsp sugar for the coffee
  • 70g liquer amaretto, for the coffee
  • little cocoa for dusting
Start the preparation making coffee. Pour into a spacious bowl hot and add sugar and amaretto, stirring until sugar dissolves. Leave it aside to wait until used.
Divide the egg yolks from the whites and beat the egg whites to stiff meringue. Refrigerate for later.
In a separate bowl, beat the chilled sour cream until it becomes a thick cream. You put it too in the fridge.
Finally, whisk in a bain marie yolks with sugar, very strongly for about 10 minutes, until the yolks get white and have a smooth, thick and velvety cream.
Within this cream, add the mascarpone…
… whipped cream, meringue and the 3 tablespoons amaretto.
Mix well, to swell and homogenize the mixture.
If necessary, put it in the fridge for a while to tighten slightly.
In a serving platter put and spread across the base the 2 tablespoons of sour cream and place a few cookies without moistened in the coffee, dry.
Then dip in a very fast action one by one the ladyfingers in the mixture of coffee and put them in reverse (the sugar surface, down) on top of the cookies, making sure to form a square and if necessary cut in half some ladyfingers.
Spread a rich dose of cream …
… and follow the same rate two more alternate layers cream- ladyfingers- biscuits cinnamon.
If you want above the cream, in the intermediate layers, sprinkle some cocoa for extra flavor.
The ladyfingers are groomed always in the same direction and not crosswise.
Straighten the final surface with the back of a spoon, cover with foil or film making sure not to touch the surface of dessert and place in the refrigerator for at least one hour.
When it is to be served, sprinkle with some cocoa powder.
Despite the detailed descriptions that you might find it difficult to perform, but it is a very easy, tasty and cool dessert. Everything you need for the summer.
