The weather in Greece in the middle of this June looks a bit "unreal", heavy, as rain, hurricanes, hail, sudden heavy showers and other, even more unpleasant, which is not of the present analysis.
If you're in a home that can provide the necessary, try to make these very simple cherry pies and enjoy with the least possible worries and positive sign.

Ingredients (4 cherry pies)

  • 1 puff pastry sheet
  • 220g (7.8oz) cherries, net weight
  • ½ lemon zest
  • 1 tbsp semolina fine
  • 1 tbsp corn flour
  • 1 tbsp brown sugar or ½ tsp stevia
  • 1 tsp lemon extract or some lemon juice
  • 1 egg yolk + little milk for spreads
  • sugar powder for sprinkling, optional
Wash & dry the cherries, remove their stalks and remove the seeds with the special tool. If we want keep them aside and use them for making cherry liqueur.
Put in a bowl the cherries cut in 4. Sprinkle with the lemon extract and sprinkle with zucchini, corn flour, semolina and brown sugar or stevia. Stir well and leave them for a while.
On the workbench spread the puff pastry sheet and sprinkle with a little flour. With the roller we flatten it slightly.
Using a small pot for trail with Ø15cm, cut 4 circles with the dough wheel.
In the middle of the circle place 2-3 tablespoons of the cherry mixture. Pass by a brush all around the perimeter of the circle with the yolk. Pick up the other half and cover the stuffing. Press with a fork around to close well. Make 3 diagonal small marks and place the pies in the oven baking tray on non-stick paper. Bake at 200℃ (392℉, Gas:5.7) for 30′.
