Ingredients (~10 Cake Slices)

  • 3 ripe bananas
  • 80g (2.8 oz) melted butter
  • 100g (3.5 oz) sugar
  • 1 egg slightly beaten
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1 tsp baking soda
  • a pinch of salt
  • 200g (7.1 oz) flour for all uses
  • 100g (3.5 oz) mini caramel chips
Butter and cover with a non-stick paper a ~12×26cm (4.7×10.2in) loaf pan and leave it aside. Peel the bananas and put them in a medium sized bowl. Melt them with the fork. In the bowl add the egg lightly beaten, sugar and butter melted without burning. Stir until the mixture is smooth. Don’t overmix the batter!
In the flour add baking powder, a pinch of salt and baking soda. Mix and then pour it into the liquid mixture. Finally, we incorporate the vanilla extract and the mini caramel chips, holding a few to the edge for the coating.
Pour the banana bread mixture into the lined loaf pan and straighten the batter surface with a spatula.
Sprinkle with the drops of mini caramel chips that you have kept.
Keep in mind that the cake is not very sweet. If you want to add a little sugar still.
Bake at 170℃ (338℉, Gas Mark:3.5) with air for ~50' or as long as necessary to cook. Try with a toothpick at the center of the cake to get clean. Remove the cake from the oven and let it cool down on a rack.
