Ingredients (~1100g Ζύμης)

  • 700g flour
  • 7g (2 tsp) instant yeast
  • 2 tbsp sugar
  • 2 tsp salt
  • 1 tbsp olive oil
  • 400g bottled water

In a large bowl mix all the ingredients with a spoon. If necessary add a couple of tablespoons of water. Cover the bowl and refrigerate for 24-48 hours.
When you want to use the dough, pour it on a work surface and divide the dough into 4 equal portions with floured palms. We hold one part to make the rolls and the other 3 put them in plastic bags and directly in the freezer to make pizzas whenever we want.

Ingredients (3 buns)

  • 280g (9.9oz) ¼ single doug)
  • 2 tbsp roasted sesame+little blackberry
  • 1 tsp turmeric
  • 1 tbsp lightly roasted cumin
  • a little semolina light
Lightly flour the dough and fold it 3-4 times as an envelope.
Spread it lightly and add the cumin and turmeric. Knead it to incorporate the spices into the dough.
Cover it and let it warm to inflate.
Divide it into 3 equal parts and form short loaves to make 3 buns respectively.
Sprinkle on top with sesame, mixed with a little black pepper. Sprinkle a little semolina on the worktop and one by one we place it on top of it and then immediately bake in a flat oven.
Bake in preheated oven at 200℃ (392℉, Gas Mark:5.7) with air for 20΄-25΄ or until lightly browned from top to bottom.
