Savoury muffins healthy and fluffy with grated zucchini and carrot. A savory Gruyere or Parmesan, grated in the mixture will offer their delicious taste and wonderful chewy texture. Fill ramekins and bake in the oven. We can also fry them, but in this way become less fat, delicious and light. Easily transportable, we take them to work or school and can become a simple and frugal meal with a green salad.

Ingredients (8 servings)

  • 2 metering cups grated zucchini or crumb from emptying zucchini
  • ½ tsp salt
  • 2 cups grated carrot
  • 1 grated onion
  • 3 cloves grated garlic
  • 2 tbsp olive oil
  • 80g (2.8 oz) grated Gruyere or Parmesan
  • 50g (1.8 oz) flour
  • 1 tbsp baking powder
  • 2 tbsp chopped dill
  • 2 tbsp finely chopped parsley
  • 4 middle eggs
  • ½ tsp Turmeric
  • salt & pepper
Puree in blender the zucchini and salt them with ½ teaspoon salt. Mix and let stand 15' aside to drain their excess water.
In a large bowl, gather all the ingredients: The grated zucchini, carrots, onion, garlic, olive oil, cheese, flour with the baking powder, dill and parsley.
Beat the eggs together with the turmeric and add to the mixture of ingredients. Salt and pepper.
Mix very well and will have a slightly viscous mixture.
Grease 8 normal in size ramequins and fill them with the mixture.
Bake in preheated convection oven at 180℃ (356℉, Gas:4.2) for 30'-35', or until golden brown. We test with a toothpick in the center of bodysuit comes out clean.
