Miracle dough for everything: How we make a unique dough, which we can use to make pizzas, calzone, peinirli, breads, focaccia, soft croissant, stuffed with sweet or savory, cheese pies or personal twisted pies, breadsticks etc. In short everything! Matures and is maintained in the refrigerator for a long time and every time you remove it from the freezer begins after a while to swell and become soft and velvety.

Ingredients (~1.8kg dough, 4 pizzas)

  • 1 kg (2.2lbs) flour
  • 4 tsp (14g - 0.5oz) dry yeast
  • 3 tsp baking powder
  • 2 tsp sugar
  • 3 tsp salt
  • 220g (7.8oz) lukewarm milk
  • 360g (12.7oz) Greek yogurt
  • 2 eggs
In the mixer, add the flour, the yeast, the baking powder, the sugar and salt. Mix with a spoon. Add the lukewarm milk, yogurt and 2 whole eggs.
Beat well with the hook component.
Until we have a soft, slightly sticky dough.
If necessary sprinkle your hands with little flour and knead briefly, folding 4-5 times.
You can use it immediately, making pizzas or split in two and one half again in two. Divide the dough in plastic bags, remove air, closing well and put in a second bag (if the dough overflows) and then freeze. So you have the dough ready for when you need it.
With ½ of the dough we make a great pizza with ingredients of your choice. Here was homemade tomato sauce, cheese, tomatoes, sliced, spicy salami, bacon, peppers and filled with stale bread of cheese sticks. Let it rise 15 minutes and bake in preheated oven for 20'-25′.
Just before you get the pizza out of the oven, straw a little bacon over it and put it back in the oven for a while…
… until the bacon becomes golden brown and crisp. Served warm and you get 8 big pieces.
