Ingredients (30 truffles)

  • 200 gr/ 7 oz dark chocolate
  • 250 gr/ 9 oz mascarpone
  • 200 gr/ 7 oz grated Savoiardi biscuits (ladyfingers)
  • 3 tbsp sifted powdered sugar
  • 2 sticks of espresso coffee
  • 2 tbsp amaretto liqueur
  • 1 tsp sweet spice mixture*
  • Sifted cocoa powder
Crush the Savoiardi biscuits.
Melt the chocolate in a bain marie or microwave. Be careful, because the chocolate dries out and burns easily.
In the bowl of melted chocolate, add the mascarpone and beat briefly with a mixer to homogenize.
Add gradually broken Savoiardi biscuits, sugar, coffee, liqueur and spice mixture *.

*Spice Mixture: The tip of teaspoon put a little cumin, cinnamon, pepper, clove, nutmeg and salt. All together it will be a teaspoon.
It gives a spicy flavor to chocolate.
Taste and correct. The sweetness of the dark chocolate depends on the cocoa content. Don't forget that the cocoa we sprinkle at the end gives a slightly bitter taste.
Put the dough, covered in the refrigerator for one hour minimum.
Mold into small balls or small cylinders about 2 cm thick and cut with a knife one cm long. Roll the pieces onto sifted cocoa and… enjoy.
Kept in the refrigerator.
If they are wet, sprinkle again with cocoa powder.
