Onion's Pie

Pies are among the favorite dishes of Greek cuisine. We like them and make them in many different versions.
Today's pie is an onion pie… enhanced with various cheese turmeric and sundried tomatoes .

Onion's Pie

Ingredients (8 servings)

  • 1 package pastry sheets (2 sheets)
  • 1½ Kgr/ 3.3 lbs onions
  • 250 gr/ 8.8 oz ricotta or feta cheese
  • 300 gr/ 10.6 oz gruyere, grated
  • 200 gr/ 7 oz bacon
  • 5 slices semi hard cheese (kaseri)
  • 4 eggs
  • 5 tbsp flour
  • 5 pieces sun dried tomato
  • 1 tsp turmeric
  • salt & pepper
  • 1 tsp sweet paprika
Peel, wash and cut the onions.
Put the onions in a saucepan and add enough water to cover them.
Boil for 10 minutes. Pour the contents of the saucepan into a colander to drain well and set aside to cool.
In large bowl, add the eggs, salt, pepper, paprika and turmeric.
Continue adding the sifted flour.
Mix.
Cut the bacon, cheese and sun-dried tomatoes into small pieces. Add to the mixture in bowl. Mix in the grated gruyere.
Stir the mixture.
Add the drained onions, stir again gently.
Crush the feta by hand and add this too.
Mix.
Grease, with a brush, a large rectangular baking pan and spread a pastry sheet.
Pour in the pie mixture and spread evenly with a fork across the surface of the pan.
Cover the ingredients with the second pastry sheet, turn the excess and incise the pie into squares.
Bake in preheated oven, with resistance up and down, at 180°C/ 350°F/Gas 4 for ~1 hour or until the surface of the pie gets golden brown.

Onion's Pie Pastry sheets should be kept refrigerated until the time of their use, because they get softened very quickly and become unwieldy. Of course if you roll your own pie sheets you get a tastier pie!
