Eggplant Rolls with Feta Cheese
Super extra snack / finger food, filled with delicious cheeses, such as feta and cottage cheese, with Greek Kalamata olives, wrapped in eggplant rolls baked in the oven. So simple, so divine!
Before you enjoy them sprinkle with a few drops of raw olive oil and with the chopped herbs.
You will appreciate these wonderful rolls of a mouthful!

Eggplant Rolls with Feta Cheese

Ingredients (8 rolls)

  • 1 eggplant, large
  • 80 gr (1.8 oz) feta cheese
  • 2 tbsp ricotta cheese
  • 1 tbsp Kalamata olives, pitted, chopped
  • 2-3 sprigs parsley, chopped
  • few basil leaves
  • 1 shot olive oil
  • salt & pepper
Wash and wipe the eggplant. Cut it in wide 0.5cm (0.2 inches) thick slices and spread onto greaseproof paper on baking pan. Grease and salt and pepper on their surface.
Bake in the oven until golden brown on both sides. Remove from the oven and leave them to cool.
Meanwhile prepare the filling. In a bowl crumble the feta cheese with a fork. Add the cottage cheese, olives, parsley and chopped basil and a little olive.
Take a spoonful of filling and hand out to each slice of eggplant. Wrap rolls and leave in a serving dish with the union down.
When you finish all the rolls sprinkle with olive oil and chopped parsley and basil. Ready to eat.
