Ingredients (4 servings)

Spread an aluminum foil on a baking pan. Wash, wipe and cut the eggplants into round slices 0.5cm/ 0.2" thick. If you prefer to peel them, do it before cutting. Spread mayonnaise on both sides of each slice. |

Crush the bread into crumbs and mix with cheese in a shallow dish. Sprinkle the eggplant slices with the crumb/cheese mix on the mayonnaise sides. Place them on the baking pan and bake at 180°C/ 355°F for 20' for each side (40' total). |

I adore anything with eggplant..especially when its golden fried :D
