Baked Eggplant

Special summer snack with sliced ​​eggplant, spread with mayonnaise and sprinkled with cheese and crumbs of stale bread.
Easy and quick to make without frying! You will definitely love it and want to make it again and again.

Ingredients (4 servings)

  • 2 eggplants
  • 5 tbsp mayonnaise
  • 2 slices stale bread
  • 3 tbsp grated parmesan (or pecorino) cheese
Spread an aluminum foil on a baking pan.
Wash, wipe and cut the eggplants into round slices 0.5cm/ 0.2" thick. If you prefer to peel them, do it before cutting.
Spread mayonnaise on both sides of each slice.
Crush the bread into crumbs and mix with cheese in a shallow dish.
Sprinkle the eggplant slices with the crumb/cheese mix on the mayonnaise sides.
Place them on the baking pan and bake at 180°C/ 355°F for 20' for each side (40' total).
