Sweet bread, aromatic, festive, for Christmas. Full of dried fruits such as raisins, cranberries, apricots, plums and many, different nuts. Sprinkled with plenty of icing sugar and decorated with red pomegranate beads, bring us luck, to exorcise the bad times of the year and to welcome the first day of winter, but also to be offered at our festive Christmas table… ⭐️🍾🥂🎄

Christmas Bread

Ingredients (a loaf)

  • 300g (10.6 oz) soft flour
  • 160g (5.6 oz) sugar
  • 1½ tbsp baking powder
  • 1 tsp soda
  • 110g (3.9 oz) butter cold
  • 120g (4.2 oz) ricotta
  • 100g (3.5 oz) mixture of dried frui
  • 80g (2.8 oz) mix of dried fruit, cut with knife
  • 1 κ.σ. lemon juice and zest
  • 2 eggs
  • 1 tsp ginger
  • 1 tsp cloves
  • ½ tsp cinnamon
  • icing sugar & pomegranate for decoration
In bowl of food processor with the fitting of the blades, add the flour, the baking powder, baking soda, ginger, cinnamon and cloves. Add the sugar and cold butter cut into small cubes.
Beat together for a while until the mixture resembles wet sand.
Pour the lemon juice, zest and eggs.
Add the ricotta. Beat the mixture slightly to unite the ingredients and pour a well floured surface.
The mixture will be sticky.
With the aid of little flour widen the dough and pour onto it the dried fruits and dried nuts. Knead slightly concentrating it to unite fruits and nuts and put the mixture in the refrigerator for 30'.
Knead, forming a large loaf or two smaller and rest them on greaseproof paper on an oven dish.
Bake at 160°C (320°F, Gas 2.8) for 45'-50'. Remove the loaf from oven and let it cool completely on a rack.
Sprinkle with a tablespoon icing sugar, and beads of pomegranate.

In the mixture of dried fruits and dried nuts put those that you like. What composition you prefer, as long as you keep the proposed amount.
