Colorful, flowery and joyful birthday cake as the spring.

It consists of three different preparations. The chocolate base, cut into three flat disks. The filling with fluffy mascarpone mousse and the coating with colored whipped cream and cigarillos Caprice complete the entire proposal.
Decorate with what you like and thus customize according to the season and the anniversary will celebrate.

Ingredients (12 servings)

For the Cake

  • 200 gr (7.1 oz) brown sugar
  • 50 gr (1.8 oz) olive oil
  • 2 eggs
  • 1 tsp vanilla extract
  • 120 gr (4.2 oz) nutella
  • 300 gr (10.6 oz) all purpose flour
  • 1½ tsp baking soda
  • ½ tsp salt
  • 220 gr (7.8 oz) buttermilk
  • 120 gr (4.2 oz) instant hot cocoa powder mix
  • 100 gr (3.5 oz) chocolate chips
In mixer bowl put sugar, eggs, oil and vanilla and whisk vigorously to become like cream.
Continuing beating add half sour milk, cocoa drink and chocolate spread. Add piecemeal, and alternately with the remaining sour milk, flour in which we have added salt and soda. Finally add the chocolate drops and mix gently with a spatula to incorporate in the mixture.
Pour the mixture into form with Ø22-24cm, lined with greased greaseproof paper.
Bake in preheated oven at 180°C (356°F, Gas:4.2) for 45'-50'. It depends on the diameter of the form that you use. Test everything with a wooden skewer that should come out clean.
Remove the base of the cake from the oven and rest on a rack to cool.

Mascarpone Mousse

  • 500 gr (1.1 lbs) mascarpone
  • 250 gr (8.8 oz) nutella
  • 40 gr (1.4 oz) dark chocolate grated
In the mixer bowl, add the mascarpone and nutella and beat well to rise and fluffy.
Add the grated chocolate and beat again to be incorporated.
Divide with a large sharp knife the base of the cake in 2 or 3 horizontal discs.
Put onto the serving base stick paper and place the first base / tray cake. Brush with half of the Mascarpone Mousse.
Cover with the second base / dish and top with the other half spread Mascarpone Mousse. Refrigerate and prepare the whipped cream.

Whipped Cream, Coating & Decoration

  • 400 gr (14.1 oz) whipping cream
  • 1 tbsp powdered sugar
  • yellow and blue food coloring
  • 400 gr (14.1 oz) rolled chocolate wafers
  • fabric flowers, ribbons, etc.
In the mixer bowl, add the cream, icing sugar 6-7 drops of yellow color & 4-5 blue.
Beat all ingredients at high speed mixer to make a fluffy and stiff cream.
Remove the base of the cake from the refrigerator and spread the whipped cream on the flat surface and the sides.
Cut / adjust accordingly the height of the cake the cigarillos. You stick them around onto the whipped cream and tie with a ribbon to stabilize. Refrigerate until the time you want to decorate it.

Decorate the surface of the cake with what you prefer. Here are used colorful fabric flowers, butterflies, ribbons, anniversary candles with "HAPPY BIRTHDAY".
When it comes to light anniversary candles, remove the flammable decoration before ignite.
Put in the fridge the cream from the previous day as well as the bucket with the beaters of the mixer. They must be cold especially these days in hot weather.
