Raspberries & Cream Cheese Crackers
The raspberries are forest fruits, tasty and slightly sour. They are cultivated now in Greece and found in quite affordable price. They are sensitive and very delicate in their treatment.
I propose a simple and easy recipe to try out and enjoy raspberries with all their flavor. Crackers cookies, spread with a light lemon mascarpone cream cheese without much sugar, just 2 teaspoons stevia or powdered sugar and fresh raspberries around the cream.

Raspberries & Cream Cheese Crackers

Ingredients (6 servings)

  • 150g (5.3 oz)raspberries
  • 12 large round crackers
  • 1 lemon
  • 2 tsp stevia or powdered sugar
  • 250g (7.1 oz) mascarpone cheese
In a medium bowl add the cream cheese together with stevia or icing sugar, zest of lemon and a tablespoon of the juice.
Beat well with a hand mixer for the mixture to rise and mix the ingredients. Taste the sweetness and bring it to your taste. Cover with cling film and put the mascarpone cream in the refrigerator until the time you assemble crackers to serve them.
On the 6 crackers put a strong dose of the cream cheese shaped as a hill. Around the the cream place the raspberries. Cover with a cracker and decorate with a little cream and a raspberry.

The final process should be done just before serving to avoid soaked biscuits from mascarpone cream.
Instead blackberries/ raspberries you can use strawberries.
Raspberry (French: framboise), fruit of the raspberry bush, is a delicious, sweet, slightly tart, fruity and aromatic flavor, fruit of the forest.
Blueberries and raspberries in appearance are similar, except for one detail: The raspberry is hollow inside when detached from the branch of the bush / plant.
