One Pot Pasta
A really ingenious idea to create a very easy and very light pasta dish with minimum effort and definitely delicious result.
In recipes such as this one, with the general title "one pot pasta" (or chicken etc.), ingredients come together in the pot and cooked together. It is a succulent pasta which, when you taste it, you will want to repeat making it often, especially when time is pressing and the mood for something more complex is not here.

One Pot Pasta

Ingredients (3 servings)

  • 250g (8.8oz) linguine
  • 250g (8.8oz) cherry or grape tomatoes, halved
  • 1 onion, thinly sliced
  • 4 cloves garlic, thinly sliced
  • 2 sprigs basil
  • 60g (2.1oz) extra-virgin olive oil
  • 1 teaspoon red-pepper flakes
  • coarse salt and freshly ground pepper
  • ~800g (~1.8lbs) water
  • grated parmesan cheese, for serving
In a wide pot, and on high heat, add the water and then pasta, cherry tomatoes, onion, garlic, flakes of chilli, basil, oil, salt and pepper and let cook for ~10'…
…stirring and turning often with a clamp, until the pasta is al dente and the water is almost evaporated.
Towards the end of the cooking, the water should be fully absorbed and all the ingredients are cooked. Taste and correct taste.
Serve with a little raw olive oil on top and sprinkle some leaves of fresh basil and parmesan optional.
