Ingredients (16 pieces)

  • 2 sheets of puff pastry 800g
  • 3 leeks
  • 200g fresh spinach washed and drained
  • 2 dry onions
  • 4 eggs
  • 300g of feta cheese
  • 200g coarsely grated gouda cheese
  • 100g coarse semolina
  • 250-300g fresh milk
  • 100g olive oil
  • sesame seeds for sprinkling
Pour the olive oil, the grated onion and the leeks into small rings into a saucepan over medium heat. Let them shine, stirring occasionally.
Add the coarsely chopped spinach. Let it cook slightly and drink its water without drying out. Season with salt and pepper. Remove the pot from the heat and set it aside to cool its contents.
In the meantime, prepare the oven dish with dimensions 26x32, lightly oiling it. At the same time, pour the milk, eggs, semolina, gouda and grated feta into a large bowl. Season with salt and pepper in moderation. Beat them with a fork to mix.
Pour the mixture from the bowl into the pot with the spinach. Mix and taste the salt.
Thaw and open the puff pastry sheet. With a rolling pin, slightly widen the sheet to cover the base of the dish and rise a little on the sides to enclose the filling.
Pour the filling on top of the puff pastry sheet and spread it to go everywhere. Turn inside as much puff pastry sheet as is left over.
Spread the second sheet of puff pastry and place it on top of the filling to cover it. Press the edges around to join the bottom sheet. Lightly carve the puff pastry into squares and sprinkle its surface with roasted sesame seeds.
Bake in a preheated fan oven at 180℃ 356℉ Gas Mark 4.2 (~4) for 1 hour. During the last 10 minutes, turn on the lower resistance and touch the oven dish directly to its base. Take it out of the oven, let it cool for a while and serve.
