Ciabatta No-Knead Bread

Ingredients (1 loaf)

  • 500g (1.1 lbs) flour for kneading or half and half for all uses
  • 380g (13.4 oz) water
  • 3g (0.11 oz) brewer's yeast
  • 1 tsp salt
  • some flower for dusting
In a large bowl add the flour, roll out a small puddle inside and add the yeast and a little water to dissolve. Dilute the remaining water and the remaining flour.
Stir the mixture for 1' with a wooden spoon and add the salt. The dough is very sticky and tight. Cover with plastic wrap and leave at room temperature for 18 hours.
After the time has passed collect the swollen dough, with a spatula, the edges towards the center of the bowl, till it is detached. Pour into a shallow pan or nonstick paper sprinkled with a healthy dose of flour.
Sprinkle flour from above too.
With lightly floured hands give shape to the dough like that of Bread.
Do NOT knead.
Cover again with cling film and a towel and leave to warm for 2-2½ hours to rise.
Bake at 200°C (392°F, Gas: 5.7) for ~40'. Allow to cool on a rack.
