Ingredients (∼40 pieces)

  • 100g (3.5 oz) butter, half melted
  • 1tsp vanilla extract
  • 20g (0.71 oz) milk
  • 20g (0.71 oz) vegetable oil
  • 110g (3.9 oz) icing sugar
  • 1 egg
  • 200g (7.1 oz) flour
  • 10g (0.35 oz) baking powder
  • 50g (1.8 oz) pistachio, crushed
  • 60g (2.1 oz) chocolate, melted
In the mixer bowl, add the butter, vanilla, milk, oil, icing sugar and egg.
Beat vigorously for 2' to swell and become white.
Add gradually and little by little the flour mixed with baking powder, kneading together until fully incorporated and have a smooth, soft dough.
Take a little dough at a time and roll out to a thickness of 3-4 mm (0.16 inches), onto a silicone surface.
With the cookie dough cutter, cut various shapes.
Unite, pieces of dough left over, with the rest and continue until the dough runs out.
Makes 2 pans.
In a large shallow oven pan, lay greaseproof paper and place the cut biscuits spaced.
Bake in preheated oven at 180°C (356°F, Gas 4.2) for ~12 minutes.
When they start to brown around the edges, they are ready. Do not let them overcooked.
When they have cooled, dip in half the melted chocolate, sprinkle with grated pistachios and let them dry.
You test, afterward.
