Baked Eggplant with Feta
Simple things, concentrated flavor and Low Carb diet.
Grilled eggplant, sprinkled with a little feta cheese and chopped fresh cilantro to make a delicious and hearty appetizer. We enjoy in the terrace in the evening with friends.

Baked Eggplant with Feta

Ingredients (6 servings)

  • 4 eggplants, large
  • 4 tbsp olive oil
  • 2 cloves garlic
  • 200 gr (7.1 oz) feta cheese
  • little fresh cilantro or parsley, chopped
  • salt & pepper
Place the eggplants whole onto the oven shelf covered with parchment paper. Bake in a preheated oven at 190°C (374°F, Gas 5) for 45'-50' or until cooked and tender.
When cool, peel them and chop the flesh with the knife.
Drizzle with olive oil and lightly salt.
Puree the garlic and add stirring.
Transfer the mixture to a serving platter, add feta cheese rubbing with fingers, sprinkle with cilantro and freshly ground pepper.
