Peppers Cake

Savoury cake with colorful sweet peppers, suitable to be served in buffet or in the daily table, like a hearty and delicious healthy snack.
It is easy, fast and eaten with joy by children and adults.

Ingredients (8 servings)

  • 200gr/ 7 oz flour
  • 3 peppers, assorted colours
  • 1 tsp dry yeast
  • 2 eggs
  • 50 ml/ 1.7 fl oz olive oil
  • 50 ml/ 1.7 fl oz milk
  • 100gr/ 3.5 oz gruyère cheese, grated
  • salt, pepper & paprika
Wash and peel the peppers removing the seeds. Cut into cubes and put aside for later.
Dissolve the yeast in warm milk.
In a large bowl, whisk together the eggs, the olive oil and gradually add the spices and the milk with the dissolved yeast.
Sieve the flour and add to mixture in the bowl, mixing well. Add the peppers.
Finally add the gruyère cheese, grated on the coarse grater, stirring with a spoon.
Butter and flour an oblong form 28 × 9cm/ 11" × 3.5" and pour the mixture of the dough.
Place the pan in preheated oven 180°C/ 350°F/ Gas Mark 4, for 25 - 30 minutes, until cake gets a golden brown colour and a toothpick inserted in the center of the loaf comes out clean.
Let it cool in the pan for about 5 minutes…
…then run a butter knife around the edges of the pan to loosen the cake and turn it out onto a rack to continue cooling.
May be eaten warm or at room temperature.
