Coconut Muffins

Easy, fast and simple. What other than muffins!

Ingredients (12 muffins)

  • 4 eggs
  • 1 cup/ 200 gr/ 7 oz sugar
  • 3 tbsp cornstarch
  • 1 tbsp baking powder
  • 3 cups/ 150gr/ 5.5 oz grated coconut
  • 1 tsp almond or vanilla essence
  • a pinch of salt
  • 36 blanched almonds
In the mixer beat well the eggs with the sugar until white and fluffy.
Add salt and almond essence.
Pour a little bit of grated coconut and the baking powder, and stir together with a spoon.
Finally add the cornstarch…
…stir once more, to smooth the mixture and it is ready to fill the muffin holders.
We fill the muffin holders by ¾.
Place the blanched almonds on top, put the muffins on a shallow pan and place in preheated oven at 180°C/ 350°F for 20 minutes…
…until cooked and golden.
