Pear Strudel

Fine taste, crisp crust and soft golden pastry filled with fragrant pear and cream cheese.
If this combination inspires you, create and enjoy a very delicious dessert with pears. A fruit that is not our first choice for desserts, which is usually an apple.

Ingredients (10 servings)

  • 1 package puff pastry (2 pieces)
  • 300gr/ 10 oz cream cheese
  • 2 tbsp icing sugar
  • 4 pears
  • 2 tbsp brown sugar
  • ½ tsp powder cinnamon
  • ¼ tsp black pepper
  • 2 eggs
  • 2 tbsp honey

Instructions

Sprinkle a surface (table) with corn flour, roll the pastry into a rectangle with dimensions 40 cm × 32 cm/ 16"× 12".
Cut 2 strips 2 cm/1" from the perimeter and keep them for later. We are left with a puff pastry sheet of 32cm × 24cm/ 12" × 8".
We cut in half to create 2 small oblong sheets.
These will be the base of the strudel.
Repeat with the second pastry sheet to make the sheets which will cover the strudel.
Place wax paper in a large, shallow baking pan and put the two oblong pieces next to each other and spaced, not touching.
Beat one egg with one tablespoon water and brush the edges of the sheet. Up there, all around, will put in two layers, the cut strips of pastry, brushing each time with the beaten egg to stick them together.
Prepare the filling.
With a fork, mash the cheese and in it stir the egg and powdered sugar.
Spread half the mixture into each pastry sheet. Spread with the back of a spoon.
We clean the pears and cut into slices. Mix the brown sugar, cinnamon and pepper and add half the quantity of this mixture over the pears. Shake, so that it mixes well.
Place vertically (as possible) the slices of pear on top of cream cheese mixture. Repeat for the other sheet.
Take the other two sheets of puff pastry and cover the pears. If the top sheet is larger just cut it to size. Gently press the edges all around, sticking to the bottom sheet strips.
Carve 2-3 lines with a knife, brush with the remaining beaten egg, and sprinkle the remaining cinnamon, sugar mixture.
If you have leftover puff pastry, give it some shape and stick on the strudel with some beaten egg.
Bake in a preheated oven at 180°C/ 360°F for 20 minutes or until it rises and the pastry gets a golden color.
Remove the pan from the oven, heat the honey slightly in the microwave oven and brush the baked strudel.
