Teriyaki Chicken

Teriyaki is a cooking technique, used in Japanese cuisine to grill fish (or meat), dipped in sweet soy marinade and enjoyed by drinking Saké, a Japanese alcoholic beverage made from rice.
We will make crispy chicken drumsticks in a fragrant marinade with a very easy recipe.

Teriyaki Chicken

Ingredients (4 servings)

  • 8 chicken drumsticks
  • 100 gr/ 3.5 oz sesame
  • 200 gr/ 7 oz bread crumbs

Marinade

  • 50 ml soy sauce
  • 1 shot alcohol (optional Saké)
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 2 tbsp balsamic vinegar
  • 2 garlic cloves
  • 1 tsp ginger powder
  • salt & cayenne pepper
In a large bowl mix well all the marinade ingredients to unite the aromas and flavors.
Put the chicken drumsticks in the marinade mixture and stir to get them wet from the mixture.
Cover the bowl and leave them in the marinade as long as possible. If possible let them stay overnight.
When ready to grill, mix the bread crumbs and the sesame.
Place the chicken drumsticks one by one on the mix to get covered all over.
Grease an ovenproof pan lightly and place the breaded pieces of chicken.
Bake for 30 minutes at 180°C/ 350°F/ Gas 4 or until cooked thoroughly.
If you like you can boil the marinade left in the bowl with 1 tbsp of cornflour to thicken and pour over the grilled drumsticks, or over the rice that will accompany this dish.
