Rice with Saffron and Mushrooms

Rice flavored with Saffron and mushrooms.
Served as side dish but can be enjoyed as main, along with a light salad.

Ingredients (4 servings)

  • 250 gr/ 8.8 oz yellow rice
  • 250 gr/ 8.8 oz mushrooms, sliced, fresh or frozen
  • 1 medium onion, chopped
  • 4 tbsp olive oil
  • 2 tbsp butter
  • a pinch of safron
  • salt & freshly ground pepper
In a frying pan heat the olive oil and sauté the onion gently until polished.
Add the mushrooms and let them absorb the juices and cook.
Remove from the heat, add salt and pepper and let aside for a while.
Wash the rice and drain. In a saucepan heat the butter and saute the rice until browned.
Add 400ml/ 13.5 floz water or beef broth and let it boil until cooked. If necessary add a little more water.
A little before the end add the egg yolk and mix.
Finally, add the mushroom mixture.
Mix and withdraw the saucepan from the heat. Cover with a kitchen towel and the lid of the pot and allow 5 minutes to mix the flavors and aromas of rice. It is perfect as a side dish to a main meat dish.
