Meat Loaf Low Carb

Ingredients (6 servings)

  • 800 gr/ 1.8 lbs κιμάς
  • 1 medium onion, chopped
  • 2 eggs
  • 3 tbsp κέτσαπ, low carb
  • 1 tbsp crushed coriander seeds
  • 1 tsp turmeric (optional)
  • 1 tsp ginger
  • 2 tbsp Worcestershire sauce
  • 4 tbsp gruyere cheese, coarsly grated
  • 2 tbsp parmesan cheese, grated
  • 1 tsp salt
  • 14 slices bacon
Mix all the ingredients, except cheese and bacon, in the order of the list .
Knead well to mix.
Finally add the grated cheese, taste the mixture, and if necessary add salt and knead some more.
Spread a piece of baking paper onto the table. Place the 7 bacon slices in a row, one under the other creating a "pad" where you will place in a while the loaf.
Divide the mixture in the dough in two parts and take the first half. Mold it to a roll and place it on the paved slices of bacon.
Turn the edges of the bacon up to "hug" and to cover the roll.
Carry it very carefully, using a spatula to avoid breaking, into the pan with the union facing down.
Repeat for the other half.
Fill the gap between the rolls with two colorful peppers and 2-3 carrots (optional).
Bake in preheated oven at 200°C/ 400°F/ Gas 6 for 45'-50'. If they get color too soon, cover them with a baking sheet.
When cooked, remove from oven, leave for 10 minutes to cool slightly and serve by cutting in slices.
