Fried Cheese Pies
Cheese pie, crunchy and delicious, fried in light oil for lighter flavor. The irregular, rounded shape and the whole preparation refers to their style, "rustic"!
Unique flavor, one that can provide us with a simple fried dough, stuffed with a delicious little feta cheese, our feta cheese.
A salty, cheesy "donut", which is eaten hot for genuine, hearty enjoyment!

Fried Cheese Pies

Ingredients (8 servings)

  • 270g (9.5 oz) flour
  • ½ tsp salt
  • 150g (5.3 oz) feta cheese, crumbled
  • 200ml (6.8 floz) water, lukewarm
  • 1½ tsp dry yeast
  • 1 tsp sugar
  • some oil for the hand
  • 60 ml (2 floz) vegetable oil for frying
In a small bowl mix the sugar, yeast and water.
Cover and allow to warm up for 15' to foam and rise the yeast.
In medium bowl, sift the flour with the salt.
Roll in flour a puddle and add the yeast mixture uploaded.
Knead with your hand gently for 5'-7' to join ingredients and have a homogeneous mass of dough soft and warm.
Grease with a little oil, the bowl and the surface of the dough. Cover with cling film and a tea towel. Leave it in the warm for ~1 hour to rise.
After ~1 hour, when doubled in volume remove the membrane…
…and invert the bowl of dough onto a lightly greased work surface or silicone surface.
Divide the dough into 8 equal parts.
Take one piece of dough and with your fingers mold it into a round pie as large as half the palm, approximately.
You will need to oil lightly your fingertips. Helps in opening and will not stick to the dough.
Place in the center of each mini pie a tablespoon of grated cheese and begins to close the edges toward the center of the pie…
…until the filling is covered.
Push it, molding it to become flat, locking in the interior the filling.
One by one, on ending, place it onto greaseproof paper towels.
In a large skillet with nonstick coating, add the oil and let it burn.
Put one or two pies at a time and fry well until golden on both sides.
Once in contact with the hot oil they start and inflate like donuts.
Pull them out on a platter strewn with absorbent kitchen paper.
Put paper between the cheese pies to absorb all the excess oil, while maintaining hot.

Eaten hot.
It is an excellent and very hearty breakfast.
