Tarte Tatin

Tarte Tatin with crisp, delicious apples, so that we can attribute to this tart the corresponding dimensions of the urban legend of the sisters Stéphanie and Caroline Tatin, who legend gave birth to her, surrounds her, and wants her with apples. It also made by bananas, pears and quinces.
Caramelized apples, in butter and sugar, topped with a fluffy pastry. So simple, so delicious and so unique!
That which makes it very special is the intense flavor gives her the star anise!

work: 40′ time: 1h:10′ easy:

Ingredients (6 servings)

  • 7-8 apples Golden
  • 1 lemon
  • 120g (4.2 oz) sugar
  • 120g (4.2 oz) butter
  • 4-5 pieces star anise
  • 1 puff pastry sheet
Wash, clean and cut apples in half, remove the seeds. Rub them with lemon and assemble in a bowl.

For caramelizing the apples, melt butter in skillet over medium-high heat. Holding the handle, rotaty so that the butter goes everywhere…
Sprinkle sugar and place the peeled apples and star anise.
Bring to a boil, eliminate juices and get the beautiful color of amber. This will take about 15 minutes. Turn on the other side once.
Leave them aside to cool.
Roll out the puff pastry sheet and cut on the diameter of the pan and a little more.
Pour the contents of the skillet into the pan with the curved side of the apples facing down.
Cover the apples with the pastry.
With the knife make two small incisions in the center of the leaf shape X.
Bake in preheated oven with air at 190°C (374°F, Gas 5) for 35'-40' until the pastry gets a beautiful golden color.
Remove from the oven, let it cool slightly and turn it upside down on a serving platter.
It is important to choose apples that hold their shape after cooking. I think, the Golden, not too ripe, are the best.
