Pancakes, known to us all are delicious, easy to make and can be combined equally well with savory or sweet flavors. This American dish that has spread and loved in many countries, not only in our homes but also in hotels, where they welcome populous and diverse population. There is no hotel that respects himself on one side of the world to the other, which does not include in the breakfast of Pancakes!
Today we enjoy them fluffy and warm, with strong orange flavors, with Greek ricotta and bathed with beautiful sweet kumquat.

Ingredients (16 Pancakes)

  • 200g (7.1oz) flour
  • 200g (7.1oz) ricotta
  • ½ tsp salt
  • ½ tsp baking soda
  • 1½ tsp baking powder
  • 2 large eggs
  • 3 tbsp sugar
  • 75g (2.6oz) butter
  • ½ orange zest & juice
  • 200g (7.1oz) milk
  • kumquat sweet or any other you prefer
In medium size bowl mix the flour, baking soda, baking powder and salt. Leave aside for a while.
In a saucepan, heat the milk with the butter to melt. Remove from heat and let it cool slightly. Inside the milk mixture add the orange juice.
In a large bowl, beat the egg yolks with 2 tablespoons of sugar until you have a creamy mixture.
With a hand mixer, beat the egg whites with a spoonful of sugar to stiff meringue and set aside.
In the bowl with the yolk mix, add the zest of an orange and the milk-butter mixture.
Begin to add to the flour mixture slowly in three portions, stirring just until dry ingredients are wet. Do not mix very much even if not completely absorbed the flour.
With a rubber spatula wrap the meringue into the mixture from the bottom to the top and add the crumbled ricotta.
Pour a large spoonful of the mixture in a very lightly greased pancake pan or small pan on a medium-low heat.
When the surface begin to air bubble and dry, carefully turn and on the other side.
Fry a few at a time and place them on a hot plate with wax paper between them. It keeps them hot until eaten.
Serve hot, accompanied with what you like.
