Today we are cooking delicious Lemon Chicken, braised with rosé wine (the same that will accompany our meal) in the Instant Pot. "All in one"!
The food is cooked in the juices of the accompanying vegetables, small carrots, potatoes, onion, garlic and basically without stirring. This way they come out of the cooker intact & presentable without disintegrating to be served on our table, so that we can enjoy a delicious and economical dish.
The Chicken is cooked perfectly and the potatoes are soft and delicious.

  • 1 chicken 1300gr chopped or whole
  • 80gr olive oil
  • 80gr rosé or white wine
  • 1 onion
  • 4 cloves of garlic
  • 2 large potatoes
  • 6-8 small carrots
  • 1 lemon
  • oregano, salt, pepper, smoked paprika
Wash the chicken very well, wearing disposable gloves. Let it drain or dry it with kitchen paper. Sprinkle the chicken pieces with oregano and smoked paprika and season well on all sides. Prepare the remaining ingredients to put in the pot.
Heat the oil in the pot and place the sliced pieces of meat to sauté and brown well on all sides, turning them.
Add the onion and garlic…
… and then the potatoes in thick pieces and the whole carrots.
Squeeze the lemon and add the lemon wedges to the pot.
Deglaze with the wine, add a glass of water and close the pot to cook the food for ∼20 minutes.
Remove the pot from the heat and let it decompress. Open it, check the amount of liquid, sprinkle a teaspoon of salt and a little pepper.
Cook for another 5-7 minutes, with the pot open, so that the juices of the food are slightly concentrated.
Serve on a large platter in the center of the table, with extra juice from the food.
