Ingredients (8 servings)

  • 300 gr/ 10.6 oz biscuits (I use hobnobs but any will do)
  • 50 gr/ 1.75 oz butter at room temperature
  • 1 shot baileys
  • 300 gr/ 10.6 oz white chocolate
  • 450 gr/ 15.9 oz cream
  • zest of an orange
Crumble the biscuits in a blender.
Add 50 gr/ 1.75 oz of butter and a shot of Baileys.
Stir well to cover the biscuits, which will form the basis of the cake
We take a form with a removable base and a diameter of 18-20 cm/7.1-7.9 in
We press the cookie mix with a spoon on the basis of the form
Melt the chocolate in a bain marie over low heat, being careful not to let it seize or burn
Stir constantly until melted and remove from the heat and let it become lukewarm
In a bowl whisk the cream, making sure it is not too cold. If it is, leave it for a while to reach room temperature or your chocolate will seize
Stop whisking when the cream forms ribbons for a couple of seconds
Pour the melted chocolate into the bowl with whipped cream and stir until completely mixed
Fill the form and put it in the refrigerator. Allow several hours (at least 3h) to freeze. When it comes to serving we decorate the torte as we please!
Have a happy and delicious new Year
