Caramel Torte

Cookies, milk and vegetable cream. All well beaten and mixed together. Sprinkled with a sweet, home made, caramel flavor. A delicious, frozen treat for the summer, with pure flavors and a few simple ingredients. Can be served in more formal gatherings. Decorate your cake with crushed transparent caramel pieces that give a formal look!

Caramel Torte

Ingredients (10 servings)

  • 1 can of sweetened milk
  • 1 can evaporated milk
  • 500 ml/ 17 fl oz vegetable cream
  • a shot of liqueur amaretto
  • a tsp almond essence
  • 2 packets biscuits petit beurre
  • caramel for topping
In a large bowl, break 1½ packets of petit beurre in chunks and let aside for later.
Spread the petit beurre from the remaining half a packet (out of two packets we had) as a base to the form. In this way, petit beurre help to create a strong base for the torte, making serving a lot easier.
In the mixer bowl, combine the two kinds of milk and the vegetable cream. Beat vigorously until thick. Towards the end add the amaretto liqueur and almond essence. Stop the mixer and add the crushed biscuits to the bowl. Mix gently.
Pour the mixture into the pan, above the petit beurre, and put the torte in the freezer overnight. Before serving, prepare the caramel and decorate.


  • 1 cup of sugar
  • 1 tbsp lemon juice
  • 1 tbsp water
  • a baking sheet
  • some vegetable oil
In a nonstick saucepan add the sugar, lemon juice and water. Heat over medium heat and stir briefly until the sugar melts.
When the caramel starts to get a blond color remove the pan from the heat. Do not let it overcook or it well get a dark color and a bitter taste.
Spread over a heat resistant surface, small pieces of parchment paper and grease lightly with vegetable oil. Pour a small amount of hot caramel on these parchment papers pieces. Lift up at one end, for the caramel to roll and make a crust as thin as possible.
Allow it to cool for a while. Lift the paper and push to break the caramel into pieces. With these broken pieces, decorate the surface of the torte.
