Tasty Low Carb chicken dish.
Spinach, fresh vegetables and a blend of cheeses and yogurt. All together, baked in the oven for a tasty, delicius result.

Low Carb Chicken with Spinach

Ingredients (2 servings)

  • ∼700g/1.5 lbs chicken
  • 700g/ 1.5 lbs spinach
  • 2 leeks
  • 2 green onions
  • 1 large onion
  • 6 broccoli tufts
  • 70ml/ 2.4 floz olive oil
  • 200g/ 7.1 oz strained yoghurt
  • 200g/ 7.1 oz grated cheese (gruyere & regato)
  • 2 Tbsp flax seed grated, optional
  • salt & pepper
Put 2 Tbsp of olive oil, in an ovenproof dish and place the chicken in the dish.
Sprinkle with salt, pepper and a little flaxseed.
Put in the oven at 180°C/ 360°F/ Gas 4, covered with foil, for 30' to prepare the spinach and other vegetables.
Clean and wash the spinach and broccoli. Leave them to dry and prepare the other vegetables.
Peel, cut into rings and wash the leeks and onions. Drain.
Finely chop the onion.
In a deep saucepan, add the remaining olive oil and sauté the onions, scallions and leeks.
Add the broccoli tufts and stir gently to sauté.
Add the drained spinach.
Allow to cook for a while to absorb the water.
Sprinkle with salt, pepper and a little more flaxseed.
Remove the saucepan from the heat and let it cool for a while.
In a bowl stir the yogurt and cheese and pour the mixture into the saucepan, with sauteed vegetables.
Stir well to mix the ingredients.
Take the oveproof dish from the oven, remove the chicken to a plate. Spread the spinach mixture in the ovenproof dish…
…and put on it the chicken pieces.
Put in the oven for another 30' until the chicken is cooked and golden brown on both sides.
Serve, sprinkling some more flaxseed to the plate.
