Pumpkin Soup
Hearty and delicious Pumpkin Soup, made from a large slice of a huge pumpkin, which was cut, and some pieces arrived in my Kitchen. A Pumpkin Soup was made, for the cold days and evenings of winter:
  • When we need comforting food, with warm tones and textures.
  • When we need a soup detoxifying, from the gustatory binge, and…
  • When there are pumpkins in the grocery shop!
Then enjoy it with large, overflowing tablespoons that burn the palate and tongue and warm our insides.
An orange, velvety, and thick Pumpkin Soup, with intensity in taste and in the presence of crunching, bread chunks (croutons), crisp bacon, and cheddar flakes for extra flavor. All garnish makes a very rich flavor. Thyme is the perfect fragrance eliminating the pumpkin aftertaste.
It comes with a red dry wine for the apotheosis of simplicity, taste, and enjoyment.
Be assured that you will repeat very soon, pumpkins are undefeated…

Pumpkin Soup

Ingredients (~2 servings)

  • 700g (.5 lbs) red pumpkin
  • 3 tbsp olive oil
  • 40g (1.4 oz) butter
  • 1 onion, medium
  • 400g (14.1 oz) vegetable broth
  • 3-4 sprigs thyme
  • 6 slices bacon
  • cheddar cheese flakes
  • 3 slices of bread for the croutons
  • salt, smoked paprika, hot paprika
Heat on the stove a nonstick pan, on a medium heat. Put a tablespoon of olive oil and add the bread cut into cubes browned, to be toasted…
… and become delicious croutons. You salt them warm after taking them out on a plate. Leave aside to prepare the rest.
In the same pan, add the bacon, cut into squares, to golden brown and become crispy. Remove from the pan and place them beside the toasted bread bites.
In the same pan, add the remaining olive oil, butter and chopped onion. You it turn some times to polish and get golden color.
Pour the contents of the pan into the pot.
Add the vegetable broth and pumpkin peeled and cut into chunks. Add the paprika and thyme. Bring to a simmer, with covered pot for 15 minutes until the pumpkin is easily pierced with a fork and has stayed pretty juicy.
With the blender mash the pumpkin. Add salt and spices. Taste / correct and make it as hot as you prefer.
Serve the velvety Pumpkin Soup in a deep bowl, garnished with a few croutons, bacon and cheddar few flakes. Put a little garnish on saucer, will be used…
