Excerpt from the introduction:
«Αναρωτιέμαι συχνά που είναι το απόγειο της μαγειρικής. Είναι τα πιο φρέσκα υλικά, οι πιο πολύπλοκες γεύσεις είναι το καθημερινό ή το σπάνιο; Δεν είναι τίποτε απ΄όλα αυτά. Το απόγειο δεν είναι ούτε η κατανάλωση του φαγητού ούτε το μαγείρεμα, αλλά η προσφορά του φαγητού και η συντροφικότητα…»

Ingredients (~12 pieces)

  • 200g (7.1oz) self raising flour
  • 50g (1.8oz) fine semolina
  • 2 tsp baking powder
  • 150g (5.3oz) fresh milk
  • 150g (5.3oz) olive oil
  • 3 large eggs or 4 normal
  • 250g (8.8oz) spinach
  • a little rocket
  • 120g (4.2oz) gruyere
  • 120g (4.2oz) fresh mozzarella, a ball
  • 10 black olives without peat
  • 1 sweet red pepper, diced
  • 10 red or yellow small tomatoes
  • 1 tbsp pink pepper
  • 1 tbsp raisins, optional
  • salt & pepper
Prepare, clean, wash and drain the cake vegetables. Prepare and all other ingredients finished up on the workbench ready to use.
In a large bowl sift the semolina, flour and baking powder. From above, pour the eggs, salt and pepper.
Add the milk and the olive oil.
Stir well from bottom to top, with a large, wide, wooden spoon to homogenize the slurry.
Add spinach and rocket to chunks of length ~2cm (~0.8in). Pour the gruyere cheese grated into the thick grater, the mozzarella in cubes, the tomatoes in the two, the pepper in chips, the raisins, the olives and the pink pepper. From the ginger and pink pepper, keep a little on the edge for the cake surface.
Mix well to mix with the porridge.
Butter well with plenty of butter and fry a form of cake with Ø22cm (Ø8.7in) and height 10cm (3.9in). Inside, carefully add spoonfuls of cake mix.
Lay the surface and sprinkle with a little grated cheese on the fine grain and a few grains of pink pepper.
Bake in preheated air oven in the lower grill of the oven at 180℃ (356℉, Gas Mark:4.2) for 50'-1h:00′.
At 10' before the end, we try sinking a wooden straw in the center of the cake to get clean and place the form, carefully because it is burning, on the bottom of the oven to get cooked well and at the bottom. Remove the form from the oven and touch it on a grill for 10' to cool down. Remove the cake from the form and leave it on the grill to cool completely.
