Fruit is an important supplement to our daily diet. Many times they are replacing a whole meal and for us it has become a favorite habitat for their consumption. Some of these become cakes, since it is an easy batter, with short and simple procedures, made without the need to use a mixer and we enjoy it with family and small.
Apples are made in many different ways, added to sweet or savory delicacies. Golden Delicious apples were used in this fragrant Apple Cake and are the finest in taste that we can enjoy; however, it has the intensity and character of being soft and tender thanks to the apples and the addition of olive oil in the batter as well as a little yeast along with the baking powder. You will definitely enjoy it until the last crumb.

Ingredients (~8 servings)

  • 320g flour
  • 2 golden delicious apples
  • 230g sugar
  • 3 eggs
  • 70g olive oil
  • 200g concentrated milk
  • 1 lemon, zest
  • 2 tsp baking powder
  • 1 tsp yeast
  • 1 tbsp brown sugar
  • a little icing sugar for sprinkling (optional)
In medium-size bowl, add the sugar and eggs and beat briefly with the wire. No mixer required.
Add the olive oil and lemon zest. Then add the flour -with baking powder & yeast- alternately to the milk. Gently mix to homogenize.
Use non-stick paper to a form with detachable sides and Ø22-24cm (Ø8.7-9.4 in). Pour the mixture of cake that will be thick enough.
Clean the apples and cut into quarters and every quarter into slices. Dip vertically and circularly the pieces of apple on the batter surface. Sprinkle with brown sugar.
Bake in a preheated air oven at 180℃ (356℉, Gas Mark:4.2) in the penultimate grill for 30'-35'. Remove the form from the oven and let it cool down on a wire base.
